Paleo Spaghetti Squash

- 1 Spaghetti squash
- 2 Sausage
- 1 Tomato duced
- 1/4 cup Olive oil
- 2 Garlic cloves minced
- 1 15 oz can of diced tomatoes
- 4 oz Baby spinach
Directions

1Instructions Preheat oven to 375F Split the squash in 1/2 and scrap out the seeds Season squash with olive oil, and salt and pepper to taste Bake for 1 hour or until tender.

2Let squash cool for 10 min While its cooling cook the sausage over medium heat in a skillet.

3Shred the inside of the squash with a fork.

4Dice the tomato in small chunks Toss in spaghetti squash into skillet, add tomato, garlic and cook for 2-4 min Add spinach until it wilts.

5Salt and pepper to taste Enjoy!
