- 40 g butter
- 250 g bacon, diced
- 1 garlic clove, crushed
- 125 ml boiling water
- 750 g butternut pumpkin, peeled, seeded, diced
- 4 green onions, sliced
- salt and pepper
Directions

1Melt 10 grams of butter in large fry pan.

2Cook bacon and garlic till browned lightly.

3Remove from pan, drain on paper towel.

4Into the same pan, add boiling water and diced pumpkin.

5Cover and cook 10 - 15 minutes till tender.

6Return bacon mixture and cook uncovered for a further 10 minutes.

7Add green onions and season to taste, toss gently.
