  • 1/2 cup yellow cornmeal
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground celery seeds
  • 1/4 teaspoon dry mustard
  • 4 (6-ounce) farm-raised catfish fillets
  • 1/4 cup fat-free milk
  • 1 tablespoon vegetable oil

    Heat oil in a nonstick skillet over medium-high heat. Add fish; cook 3 minutes on each side or until fish flakes easily when tested with a fork.
