- 8 large Irish potatoes
- 2 large onions
- 1/2 c. olive oil

Directions

1Wash potatoes and slice (with skins left on).

2Slice onions into rings.

3In large skillet, pour oil.

4Let it heat to almost boiling and add potatoes and onions.

5Season with salt and pepper and other seasonings to taste.

6Cook, covered, for about 15 minutes.

7Uncover and cook until light brown.

8Fork will stick through potatoes easily when done.
