- 6 to 8 thick slices day-old rustic-style bread
- cold water
- 8 plum tomatoes, chopped
- 2 cucumbers, halved lengthwise, seeded and sliced into crescents
- 8 green onions, chopped
- 1/2 c. finely shredded and lightly packed fresh basil leaves
- 1/3 c. olive oil
- 1/3 c. balsamic vinegar or juice of 1 lemon
- salt and pepper to taste

1Dunk bread into bowl of cold water.
