Ingredients

  • 6 to 8 thick slices day-old rustic-style bread
  • cold water
  • 8 plum tomatoes, chopped
  • 2 cucumbers, halved lengthwise, seeded and sliced into crescents
  • 8 green onions, chopped
  • 1/2 c. finely shredded and lightly packed fresh basil leaves
  • 1/3 c. olive oil
  • 1/3 c. balsamic vinegar or juice of 1 lemon
  • salt and pepper to taste

    Dunk bread into bowl of cold water.

    Squeeze well and tear into bite size pieces.

    In a serving bowl, toss bread and remaining ingredients.

    Serves 4 to 6 as an appetizer.
