  • 5 Potatoes
  • 1 can Corn
  • 2 tsp Salt
  • 1 packages Taco seasoning
  • 2 clove Garlic
  • 5 quart Water
  • 1 cup Diced onion
  • 4 tbsp Extra virgin olive oil
  • 2 lb Boneless skinless chicken breast

    Combine water and chicken and bring to a boil.

    Cook for 15 minutes.

    Cook potatoes on cookie sheet at 400F for 20 - 25 minutes.

    Heat 2 tablespoons of oil in a large skillet.

    Add onion and garlic.

    Saute for a couple of minutes.

    Remove chicken and shred.

    Add shredded chicken to sauted onions.

    Add taco seasoning.

    Add a quarter cup of water.

    Cook on medium heat for about 5 min.

    Remove from heat and set aside.

    Take potatoes out of the oven.

    Heat 2 tablespoons of oil in a large skillet.

    Add potatoes and sprinkle salt over potatoes.

    Add pepper if desired.

    Cook till potatoes are brown on all sides.

    In a large sauce pan, combine corn, potatoes and chicken.

    Cook on low heat for 5 minutes or until heated through.

    Serve with warm tortillas and top with chedder cheese if desired.
