Parmesan Crusted Potatoes

  • 4 medium potatoes, peeled, halved lengthwise
  • 1 -2 cup chicken broth or 1 -2 cup chicken-free broth
  • 4 tablespoons butter, melted or 4 tablespoons coconut, spread melted
  • 2 tablespoons parmesan cheese

Directions

    preheat oven to 350F.

    place slits in the top of the potatoes and place in casserole or baking dish.

    add chicken broth til potatoes are approx 1/2 submerged.
  4. 4
    pour melted spread/butter over top of each potato.
  5. 5
    sprinkle with parmesan.

    bake at 350 for 1-1 1/2 hrs, watch carefully after the 1 hour mark as the liquid will be absorbed and may burn once gone.
