- 1 lb. ocean perch or lean fish fillets
- 2 Tbsp. dried bread crumbs
- 1 Tbsp. grated Parmesan cheese
- 1 tsp. dried basil leaves
- 1/2 tsp. paprika
- dash of pepper
- 1 Tbsp. margarine, melted
- 2 Tbsp. snipped parsley
Directions

1Move oven rack to position slightly above middle of oven.

2Heat oven to 500°.

3Mix ingredients except margarine and parsley.

4Brush one side of fish with margarine.

5Dip into crumb mixture.

6Place fish, uncoated side down, in rectangular pan 13 x 9 x 2-inches, sprayed with nonstick cooking spray.

7Bake uncovered until fish flakes easily with fork, about 10 minutes.

8Sprinkle with parsley. Serve.
