  • 1 and 1/2 sticks unsalted butter or margarine, softened
  • 3/4 cup sugar
  • 5 eggs, separated
  • 6 ounces bittersweet chocolate
  • 6 ounces finely ground almond or almond flour
  • pinch of salt

Directions

    Cream butter and sugar together. Mix in the egg yolks. Melt chocolate over a double broiler. Cool and add to butter mixture. Add almonds or almond flour. Beat egg whites until stiff but not dry and fold into chocolate batter. Pour into a 9-inch square greased baking tin. Bank in a preheated oven for 45 minutes. Cool and cut into squares.
