- 8 eggs
- 1 1/2 c. sugar
- rind and juice of 1 orange and 1 lemon
- 3/4 c. potato starch
Directions

1Separate 6 eggs.

2Add 2 whole eggs to yolks.

3Beat yolks until very thick while adding sugar, a little at a time.

4Beat until sugar is dissolved.

5Add rind and juices.

6Fold starch into mixture.

7Beat whites until they form soft peaks. Add to yolks and fold until well blended.

8Pour into 10-inch tube pan and bake until nicely browned, 325° for 1 hour.

9Invert to cool.
