  • 1 pound Fresh, Ripe Tomatoes
  • 1 teaspoon Fine Salt
  • 5 Tablespoons Extra Virgin Olive Oil
  • 5 whole Basil Leaves, Chopped
  • 10 ounces, weight Resh Mozzarella
  • 1-1/8 pound Rotelle Pasta

Directions

    Bring a large pot of salted water to a boil. Wash the tomatoes, cut them in half, remove the seeds, then chop them in small pieces.

    In a medium bowl combine tomatoes, 1 teaspoon of fine salt, olive oil, and basil leaves. Cut the fresh mozzarella in 3/4-inch cubes.

    Cook the pasta until al dente. Drain the pasta well and put it in a large bowl. Add the tomatoes and toss gently to blend.
