- 1 pound Fresh, Ripe Tomatoes
- 1 teaspoon Fine Salt
- 5 Tablespoons Extra Virgin Olive Oil
- 5 whole Basil Leaves, Chopped
- 10 ounces, weight Resh Mozzarella
- 1-1/8 pound Rotelle Pasta
Directions

1Bring a large pot of salted water to a boil. Wash the tomatoes, cut them in half, remove the seeds, then chop them in small pieces.

2In a medium bowl combine tomatoes, 1 teaspoon of fine salt, olive oil, and basil leaves. Cut the fresh mozzarella in 3/4-inch cubes.

3Cook the pasta until al dente. Drain the pasta well and put it in a large bowl. Add the tomatoes and toss gently to blend.
