  • 1 cup Whipping Cream
  • 1/2 pounds Fresh Snow Pea Pods, Trimmed
  • 1/2 pounds Fresh Mushrooms, Sliced
  • 1 Sweet Red Pepper, Cut Into Strips
  • 2 Small Yellow Squash, Sliced
  • 2 cups Fresh Broccoli Florets, Chopped
  • 1/2 sticks Butter, Melted
  • 2 Tablespoons Olive Oil
  • 1 package (16 Oz.) Package Linguine
  • 3/4 cups Freshly Grated Parmesan Cheese
  • Freshly Ground Pepper, to taste

Directions

    Heat whipping cream in a small saucepan over medium heat until warm.

    Set aside.

    Saute vegetables in butter and oil in a large skillet over medium heat until almost crisp-tender.

    Add warm cream; cook over medium heat, stirring constantly, for 5 to 10 minutes or until slightly thickened.

    Cook linguine according to package directions; drain well.

    Place on a large serving platter.

    Top pasta with vegetable mixture and sprinkle with Parmesan cheese and pepper; tossing gently.
