Ingredients
- 1/2 cup sliced carrots
- 1 cup sliced mushrooms
- 1 cup sliced broccoli
- 1 red pepper, seeds removed and sliced
- 1 cup sliced green squash
- 1 cup sliced yellow squash
- 1/2 cup olive oil
- 1/2 cup Romano or Parmesan cheese, grated
- 8 cloves garlic, pealed and chopped
- 1 pound prepared pasta, such as Ziti
- 1/2 cup fresh chopped Basil
- Salt, and pepper, to taste
Directions

1Prepare each vegetable over a medium heat in a large saute pan using a touch of olive oil and garlic. Turn to brown each side then reduce heat to lowest setting and allow the vegetable to steam in its own juice until the desired tenderness is achieved. Reserve vegetables in a bowl.

2Prepare pasta by boiling in a large pot with salted water. Drain and combine with reserved vegetables.

3Mix in cheese and basil and any left over olive oil. Season to taste.
