Ingredients

  • 1 lb. Ricotta cheese
  • 1/2 c. sugar
  • 1/2 box noodles (thin)
  • 6 eggs, beaten
  • 1 tsp. vanilla
  • salt and pepper to taste
  • grated lemon and orange rind
  • 1 stick melted margarine
  • 1/4 c. Parmesan cheese
  • 2 c. milk
  • 1/4 c. Cream of Wheat

Directions

    Cook noodles and drain.

    Place in bowl.

    Heat milk with Cream of Wheat, add to noodles.

    Add remaining ingredients and mix well. Pour into a greased 13 x 9 x 2-inch baking dish.

    Bake at 325° for 1 hour or until knife inserted comes out clean.

    Could be used as hors d'oeuvre if cut in 1-inch squares.
