Ingredients

  • 1 lb. split peas
  • 1 onion, chopped
  • 3 to 4 carrots, chopped
  • 3 stalks celery, chopped
  • 2 to 3 medium potatoes, cubed
  • salt and pepper to taste
  • 1 ham bone, with meat or 1 lb. smoked sausage or use both

Directions

    Wash peas in pan. Add 2 quarts water. Bring to a boil and remove from heat.

    Let peas soak overnight. Add all veggies and bring to a boil. Reduce heat and let simmer until tender. Add meat and simmer for 2 to 3 hours.
