- 1 lb. split peas
- 1 onion, chopped
- 3 to 4 carrots, chopped
- 3 stalks celery, chopped
- 2 to 3 medium potatoes, cubed
- salt and pepper to taste
- 1 ham bone, with meat or 1 lb. smoked sausage or use both
Directions

1Wash peas in pan. Add 2 quarts water. Bring to a boil and remove from heat.

2Let peas soak overnight. Add all veggies and bring to a boil. Reduce heat and let simmer until tender. Add meat and simmer for 2 to 3 hours.
