Pea Soup

Ingredients

  • 2 c. Whole Yellow Peas
  • 1 c. Yellow Split Peas
  • 3 qt. Cold Water
  • 1 Ham bone or small Shank
  • 1 large Onion, diced
  • 3 stalk of Celery, chopped small
  • 1 sprig of Parsley
  • 1 Bay Leaf
  • 1 c. Carrot, diced

Directions

    Soak peas overnight, and then drain water before cooking.

    Put ham bone in large pot, cover and cook for 1/2 hour.
  3. 3
    Add whole peas, onion, bay leaf, parsley, and cook slow for about 2 hours. Remove ham bone from pan and set aside to cool, take any small pieces apart to add to soup later.

    Add split peas, carrots, celery and cook for 1 more hour.

    Make sure to keep adding hot water to cover peas at all times.

    Check if peas are cooked and soup has thickened.
