Pea Soup

- 2 c. Whole Yellow Peas
- 1 c. Yellow Split Peas
- 3 qt. Cold Water
- 1 Ham bone or small Shank
- 1 large Onion, diced
- 3 stalk of Celery, chopped small
- 1 sprig of Parsley
- 1 Bay Leaf
- 1 c. Carrot, diced
Directions

1Soak peas overnight, and then drain water before cooking.

2Put ham bone in large pot, cover and cook for 1/2 hour.

3Add whole peas, onion, bay leaf, parsley, and cook slow for about 2 hours. Remove ham bone from pan and set aside to cool, take any small pieces apart to add to soup later.

4Add split peas, carrots, celery and cook for 1 more hour.

5Make sure to keep adding hot water to cover peas at all times.

6Check if peas are cooked and soup has thickened.

7Add salt and pepper to taste...bonne appetit.
