Ingredients

  • 1 small ham shank
  • 8 oz. split peas
  • 8 oz. whole peas, soaked and drained
  • 3 qt. water
  • 1 large onion, chopped
  • 2 Tbsp. granular chicken bouillon
  • 1/2 tsp. garlic powder
  • 1/2 tsp. oregano leaves
  • 1/3 tsp. pepper
  • 1 bay leaf
  • 1 1/2 c. carrots, sliced thin
  • 1 c. celery, chopped

Directions

    In large pot, combine peas, water, ham shank, onion, chicken bouillon and seasonings.

    Simmer, uncovered, 1 1/2 hours.

    Remove ham shank; trim meat off bone and return meat to pot.

    Stir in carrots and celery.

    Simmer, uncovered, until whole peas are tender or split peas have desired thickness.

    Remove bay leaf. Makes 6 servings.
