- 2 cups dried peas
- 5 slices salt pork, coarse chop (1/2 pound)
- 1 medium onion, diced (optional)
Directions

1Soak peas for 2 to 3 hours.

2Using soaking water, cook the peas until mealy.

3Add pork, cover and bring to boil.

4Add onion here, if you wish.

5Reduce heat to simmer and cook until peas are done through, around 4 hours.
