- 1 (16 oz.) can sliced peaches
- 2 (3 oz.) pkg. peach or apricot Jell-O
- 1/2 c. sugar
- 2 c. boiling water
- 1 tsp. almond extract
- 1 (8 oz.) Cool Whip, thawed
Directions

1Drain peaches, reserving 2/3 cup juice.

2Chop peaches into small pieces; set aside.

3In a bowl, dissolve Jell-O and sugar in boiling water.

4Stir in reserved syrup.

5Chill until slightly thickened.

6Stir extract into Cool Whip; gently fold into Jell-O mixture.

7Fold in peaches.

8Pour into an oiled 6-cup mold.

9Chill overnight, unmold, garnish with additional peaches, if desired.
