Peach Compote

  • 4 Peaches
  • 2 1/2 cup Water
  • 100 grams Sugar
  • 1 tbsp Lemon juice

    Wash the peaches well, and make some cuts, then break in half.

    Scoop out the seeds with a spoon.

    You don't need to peel the skin.

    Add the peaches with the skin on, and all the other ingredients into a pot.

    Simmer over medium heat.

    When it starts to boil, cover with a drop lid, and simmer over low heat.

    Simmer for 20 ~ 25 minutes total after turning on the heat.

    The water is mostly evaporated, and the peaches turn slightly pink.

    Peel the skin off while they are still hot.

    Serve in a bowl, and it's done.

    Dilute the simmered sauce with soda for peach soda.
