Peach Jam

Ingredients

  • 4 cups Peaches
  • 1/4 cups Honey
  • 1/4 cups Brown Sugar
  • 2 teaspoons Cinnamon
  • 1 teaspoon Vanilla
  • 1 whole Lemon, Juiced

Directions

    Combine all ingredients in the Instant Pot, toss until combined. Cook a manual high pressure mode for 1 minute. Allow pressure to release naturally.

    Remove lid, and switch the instant pot to saute mode. Saute for about 15 minutes or until thickened, and most of the liquid is evaporated. Use a potato masher to mash into a puree.

    To make on the stovetop:

    In a large saucepan, bring peaches and lemon juice to a boil. Mash peaches into a puree. Reduce heat, then stir in honey, cinnamon and brown sugar. Bring back to a boil.

    Cook for 15-20 minutes or until liquid is evaporated and you reach your desired consistency. Remove from heat, and stir in vanilla extract.
