- 1 (16 oz.) can sliced peaches, drained or 1 1/2 to 2 c. fresh peaches, sweetened
- 1/2 tsp. salt
- 2/3 c. sugar
- 1 tsp. vanilla
- 1 tsp. almond extract
- 1/2 c. cooking oil
- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 2 eggs, beaten
Directions

1Chop peaches; drain and set aside.

2Combine flour, salt, soda and sugar in mixing bowl.

3Make a well in the center of dry ingredients.

4Add eggs and oil; stir until dry ingredients are well moistened.

5Add peaches and remaining ingredients.

6Stir until blended.

7Spoon batter evenly into greased or paper lined muffin pans, filling 2/3 full.

8Bake at 350° for 20 to 25 minutes.

9Makes one dozen.
