Peach Salad

Ingredients

  • 2 (3 oz.) pkg. peach jello
  • 4 c. peaches, chopped
  • 1/2 c. sugar
  • 1 egg, beaten
  • 1 c. whipped cream
  • 1/2 c. marshmallows
  • 3 1/2 c. boiling water
  • 1 c. peach juice
  • 2 Tbsp. flour
  • 1 (3 oz.) pkg. cream cheese (soft)
  • 1 c. chopped nuts
  • 1/2 c. Cheddar cheese, shredded

Directions

    Dissolve gelatin in hot water; chill until it begins to set. Fold in peaches.

    Turn into a 3-quart mold or a dish.

    Chill until firm.

    In top of double boiler, combine peach juice, sugar, flour and egg.

    Cook until thickened, stirring constantly.

    Cool. Fold in cream cheese and whipped cream.

    Add nuts and marshmallows.

    Spread on gelatin; sprinkle cheese on top.

    Chill several hours before serving.
