- 1 lb. cubed chicken
- 4 tsp. cornstarch
- 2 Tbsp. soy sauce
- 1 tsp. sugar
- 3 Tbsp. sherry
- 3 Tbsp. oleo
- 2 onions, sliced
- 1/2 tsp. red pepper, crushed
- 1/2 c. salted peanuts
- 2 c. cooked rice
Directions

1Blend 3 teaspoons cornstarch and 1 tablespoon soy sauce.

2Add chicken.

3Chill for 1 hour.

4Blend sugar, 1 teaspoon cornstarch, sherry and rest of soy sauce; set aside.

5Melt oleo in wok or skillet.

6Add chicken mixture.

7Stir-fry until chicken is done, about 3 minutes.

8Add onions and pepper.

9Stir-fry until onions are clear.

10Stir in sherry mixture.

11Cook until thickened.

12Stir in peanuts.

13Serve over rice.
