Peanut Soup

Ingredients

  • 2 small onions, chopped
  • 4 ribs celery, chopped
  • 1 stick (8 Tbsp.) butter
  • 4 Tbsp. flour
  • 2 c. crunchy peanut butter
  • 8 to 9 c. chicken broth
  • 1 tsp. celery salt
  • 2 Tbsp. lemon juice
  • salt and pepper to taste
  • 8 to 10 Tbsp. peanuts

Directions

    Saute onions and celery in butter until tender.

    Add flour. Stir until smooth.

    Add chicken broth; bring to a boil and add peanut butter, celery salt, salt, pepper and lemon juice.

    Heat to simmer.

    Serve and sprinkle with chopped peanuts.
