  • 2 egg whites
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 1/4 tsp. cream of tartar
  • 1/2 c. sugar
  • 1/2 c. finely chopped pecans

    Set oven at 300°.

    Beat together first 4 ingredients until forms soft peaks.

    Gradually add sugar and beat until stiff.

    Fold in pecans.

    Spread mix onto bottom and sides of a 9-inch pie pan. Bake at 300° for 50 minutes.

    Turn off oven and allow crust to dry in oven for 2 hours.

    Cool on wire rack.
