Ingredients
- 3 c. chicken or beef stock
- 1 dried red chili
- 1 medium onion, coarsely chopped
- 2 medium carrots (1/2-inch slices)
- 1 large leek (white with 2-inches of green), coarsely chopped
- 1/4 c. uncooked white rice
- 1/2 tsp. salt
- 1/2 c. smooth peanut butter
Directions

1Combine stock, onion, leek and carrots in a heavy pot.

2Bring to a boil; partially cover and simmer 30 minutes.

3Blend until smooth.

4Bring to a boil, then stir in rice, salt and chili. Reduce heat to low; cover tightly and cook 20 minutes.

5Mix peanut butter in 1/2 cup soup until smooth.

6Add to the rest of the soup. Cover, then simmer 5 minutes.

7Discard chili.

8Serves 4 to 6.
