Peanut Soup

Ingredients

  • 3 c. chicken or beef stock
  • 1 dried red chili
  • 1 medium onion, coarsely chopped
  • 2 medium carrots (1/2-inch slices)
  • 1 large leek (white with 2-inches of green), coarsely chopped
  • 1/4 c. uncooked white rice
  • 1/2 tsp. salt
  • 1/2 c. smooth peanut butter

Directions

    Combine stock, onion, leek and carrots in a heavy pot.

    Bring to a boil; partially cover and simmer 30 minutes.

    Blend until smooth.

    Bring to a boil, then stir in rice, salt and chili. Reduce heat to low; cover tightly and cook 20 minutes.

    Mix peanut butter in 1/2 cup soup until smooth.

    Add to the rest of the soup. Cover, then simmer 5 minutes.

    Discard chili.

    Serves 4 to 6.
