- 1/4 c. smooth peanut butter
- 2 egg whites
- pinch of salt
- 1/2 tsp. vanilla
- 2/3 c. sugar
- 1 (3 1/2 oz.) can flaked coconut
Directions

1Melt peanut butter over low heat.

2Cool 3 to 5 minutes.

3Beat egg whites, salt, sugar and vanilla until soft peaks form.

4Fold in coconut and melted peanut butter.

5Drop by rounded teaspoonfuls onto greased cookie sheet.

6Bake in 325° oven for 20 minutes.

7Let stand 1 minute.

8Cool on wire rack.
