Ingredients
- 3 c. all-purpose flour
- 3/4 tsp. salt
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 3 ripe pears or 2 c. grated (unpeeled, place raw pears in food processor or blender)
- 2 eggs
- 2 c. sugar
- 1 c. oil
- 1 tsp. vanilla
- 1 tsp. lemon juice or grated rind of lemon
Directions

1Using wire whisk, beat eggs, oil, sugar, vanilla and lemon together.

2Add dry ingredients, mixing with wooden spoon.

3Mixture will be very stiff.

4Add pear pulp and mix well.

5Bake 24 muffins for 22 to 25 minutes at 350°. Loaf pans will need to bake 45 minutes to 1 hour at 350°.
