Ingredients

  • 16 c. chopped pears (8 lb.)
  • 1 1/2 lb. seedless raisins
  • 1 lb. brown sugar
  • 3 c. white sugar
  • 1 1/2 jars ginger marmalade
  • 3 Tbsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. ground ginger
  • 6 c. cider vinegar
  • 1 or 2 cloves garlic, pressed
  • 3 lemons, chopped fine and grated rind
  • 3 Tbsp. chili powder
  • 3 tsp. mustard seed
  • 12 shakes Tabasco sauce

Directions

    Put all together in a large pan. Bring to a boil.

    Let bubble 20 or 25 minutes. Test to see if pears are done.

    Put in jars. Makes 13 pints.
