Ingredients

  • 3 lb. firm ripe pears
  • water
  • juice of 2 lemons
  • grated rind of 1/2 lemon
  • 4 1/2 c. sugar

Directions

    Quarter pears, core and peel.

    Cover with water and simmer until tender.

    Drain pears, mash with potato masher, add lemon juice, grated lemon rind and sugar.

    One quarter teaspoon cinnamon and 1/4 nutmeg may be added, if desired.

    Cook quickly until the consistency of jam.

    Stir carefully to avoid scorching. Pour into sterilized jars and seal with paraffin.

    Makes 4 to 6 small jars.
