- 3 c. water
- 2 c. rice
- 2 cans pigeon peas
- adobo to taste
- 3 slices bacon, cut in 1/4-inch pieces
- hot sauce to taste
- 1 whole chopped onion
- 3 cloves garlic
- onion powder
- black pepper
- 1 tsp. oregano
Directions

1In frying pan, render bacon until soft.

2Add onion and garlic until soft.

3Add uncooked rice and pigeon peas.

4Stir until completely blended.

5Put in pot and cover with 3 cups of water. Bring water to a boil.

6Reduce heat and cover.

7Simmer for 20 to 25 minutes.
