  • 1 1/2 c. yellow cornmeal
  • 1 c. unbleached flour
  • 1/3 c. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1 1/2 c. half and half
  • 3/4 c. melted cooled butter
  • 2 eggs
  • 1/2 c. chopped pecans

    Combine cornmeal, flour, sugar, baking powder and salt in a bowl; set aside. Mix together half and half, butter and eggs in another bowl. Stir liquid mixture and pecans into cornmeal mixture until just combined. Pour batter into well-greased 9 x 5 x 3-inch loaf pan. Bake at 375° for 45 minutes or until cake tester inserted into middle of loaf comes out clean. Cool in pan on cooling rack 10 minutes. Remove from pan and cool completely.
