Ingredients

  • 1/2 c. egg whites, beaten stiff
  • 1 c. sugar
  • 3/4 c. crushed soda crackers
  • 3/4 c. chopped pecans
  • 1 tsp. vanilla
  • 1 tsp. baking powder
  • 1/2 c. finely chopped dates

Directions

    Combine sugar and baking powder with stiffly beaten egg whites.

    Fold in crushed crackers, pecans, dates and vanilla. Pour into greased 9-inch pie tin.

    Bake at 350° for 30 minutes. Cool.

    Top with whipped cream and sprinkle with toasted pecans.
