- 3 c. sugar
- 1/2 c. light corn syrup
- 1/2 c. water
- 2 egg whites, at room temperature
- 1/8 tsp. cream of tartar
- 1 tsp. vanilla extract
- 2 c. chopped pecans
Directions

1Combine sugar, corn syrup and water in heavy saucepan.

2Cook over medium heat to 270° to 290° on candy thermometer, soft crack stage, stirring frequently.

3Beat egg whites with cream of tartar in mixer bowl until stiff peaks form.

4Add hot syrup 1/3 at a time to egg whites, beating constantly until stiff.

5Stir in vanilla and pecans.

6Drop by teaspoonfuls onto waxed paper. Yield:
