Pecan Pound Cake

- 1 c. shortening
- 1 1/2 c. sugar
- 2 Tbsp. milk
- 5 eggs
- 2 c. flour
- 1/2 tsp. mace
- 1 tsp. salt
- 3/4 c. broken pecan nutmeats
- 2 tsp. lemon juice
- 1 tsp. grated lemon rind
Directions

1Cream together shortening and sugar; add milk.

2Mix well.

3Add eggs, one at a time, beating after each.

4Toast nutmeats; add 1/2 cup to batter.

5Add lemon juice and rind.

6Pour into greased 9-inch tube pan; sprinkle with remaining nutmeats.

7Bake in moderate oven (325°) for 1 hour and 25 minutes.

8Cool 5 minutes. Remove cake from pan; cool on wire rack.
