Ingredients

  • 1 c. butter, softened
  • 2 1/4 c. confectioners, divided
  • 1 Tbsp. vanilla extract
  • 2 c. all-purpose flour
  • 3/4 c. ground pecans
  • pinch of salt

Directions

    In a large mixing bowl, cream together butter and 3/4 cup of the sugar with electric beater.

    Add vanilla, flour, pecans and salt.

    Beat until well blended.

    Wrap dough in plastic wrap and chill for 30 minutes.

    Preheat oven to 325°.

    Scoop up dough with a teaspoon and form into balls.

    Place on an ungreased cookie sheet and bake about 15 minutes until cookies are slightly colored, but not golden.

    Remove from cookie sheet, then roll in rest of the sugar.
