Ingredients
- 1/2 cup flat leaf parsley, chopped
- 1/2 - 1 teaspoon lemon rind, grated fresh
- 2 garlic cloves, minced
- 1 tablespoon extra virgin olive oil
- 1 (14 1/2 ounce) can diced tomatoes with juice
- 1 tablespoon fresh basil, minced or 1/2 teaspoon dried basil
- 1/2 lb penne
Directions

1Mix together parsley, lemon peel, and garlic and set aside.

2Heat half the evoo in a small saucepan; add the can of diced tomatoes, juice and all. If using dried basil, add it now.

3Simmer 10 minutes. If using fresh basil, add it now.

4Cook pasta until al dente and drain.

5Toss the pasta with the rest of the evoo.

6Add the tomato mixture and the parsley mixture and combine well.
