  • 1lb Penne Pasta
  • 10 slices pancetta or bacon
  • olive oil
  • 5 egg yolks
  • 7 tbsp heavy cream
  • 4.5 oz parmesan cheese grated
  • salt and pepper

Directions

    -cook pasta as directed

    -fry pancetta in olive oil until crispy, break into small pieces and set aside.

    -mix egg yolks, cream and half parmesan cheese in bowl.

    -when pastas done drain (save 1 cup of water) put back in pan and immediately add egg cream mixture and stir. The hot pasta will cook the cream/eggs for the sauce.

    -add pancetta and remaining parmesan cheese; salt and pepper to taste.

    -(optional) add reserved water from pasta in dish is too dry.

    -serve
