- 1lb Penne Pasta
- 10 slices pancetta or bacon
- olive oil
- 5 egg yolks
- 7 tbsp heavy cream
- 4.5 oz parmesan cheese grated
- salt and pepper
Directions

1-cook pasta as directed

2-fry pancetta in olive oil until crispy, break into small pieces and set aside.

3-mix egg yolks, cream and half parmesan cheese in bowl.

4-when pastas done drain (save 1 cup of water) put back in pan and immediately add egg cream mixture and stir. The hot pasta will cook the cream/eggs for the sauce.

5-add pancetta and remaining parmesan cheese; salt and pepper to taste.

6-(optional) add reserved water from pasta in dish is too dry.

7-serve
