  • cooking spray
  • 2 cups sliced onions
  • 1 cup sliced green bell pepper
  • 1 cup sliced red bell pepper
  • 6 garlic cloves, minced
  • 14 cup water
  • salt and pepper

Directions

    Spray medium skillet with cooking spray; heat over medium until hot.

    Add onions, pepper and garlic to skillet; cook over medium heat for 5 minutes, stirring occasionally.

    Add water to skillet; cook, covered, over medium low until vegetables are very tender and creamy, 20-25 minutes, stirring occasionally.

    Season to taste with salt and pepper.
