Lemon Soy Chicken

- 8 None chicken pieces
- 2 None lemons, zested, pith removed, sliced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 3 cloves garlic, crushed
- 1/2 tsp cornstarch
- 2 None green onions, sliced diagonally, to serve
- None None steamed broccolini, steamed rice, to serve

1Using kitchen scissors, trim excess skin and fat from chicken pieces. Pat dry with paper towel. Cut drumsticks from thighs. Cut thighs in half.

2In a bowl, combine lemon zest, soy sauce, brown sugar and garlic. Brush over chicken and place, skin side up, in a large baking dish. Scatter with lemon slices. Chill, covered, for 3 hours or overnight.

3Preheat oven to 350°F. Sprinkle chicken skin with salt. Bake for 40 mins, basting 2-3 times. Transfer to a plate. Increase oven to 400°F. Strain pan juices into small saucepan. Return chicken to baking dish and bake for 10-15 mins, until skin is crisp.

4To make gravy, skim excess oil from pan juices with a spoon. Blend cornstarch with a little water, whisk into pan juices. Bring to a boil and simmer for 5-10 mins, until thickened. Serve chicken on a bed of steamed rice with sauce, broccolini and green onions.
