- 1 whole Pumpkin, Gutted
- Olive Oil
- Table Salt
- Any Seasonings You Want, Such As Cayenne, Curry Powder, Etc. (optional)
Directions

1As you gut the pumpkins, keep all the seedsand gutsin a bowl.

2Throw them into a colander and rinse them under cold water, pulling away the chunks of pulp as you go.

3Spread the rinsed seeds out on a baking sheet.

4Allow the seeds to dry several hours or overnight.

5And beware: theyre quite sticky/slimy, so dont place them on paper towels!

6Just leave em on the baking sheet and theyll be fine.

7When theyre nice and dry, go ahead and preheat the oven to 250 degrees.

8Begin by drizzling the seeds with a couple teaspoons of olive oil.

9Use your fingers to toss the seeds around to coat.

10Then salt and season the seeds to taste.

11Pop em in the oven for an hour or so, until the seeds are light golden brown.

12Let them cool for a few minutes...then let the snacking begin!

13Pepitas need to be stored in an airtight container if they last beyond the first day.
