- 2 lb. lean beef
- 1/2 c. flour
- 2 Tbsp. oil
- 3 c. beef stock
- 1 1/2 tsp. salt
- 1 c. sliced carrots
- 1 large diced potato
- 1 chopped onion
- 1/2 tsp. black pepper
- 2 Tbsp. parsley, chopped
Directions

1Cut beef into one inch (2 1/2 cm) cubes.

2Cover meat with flour and brown on all sides in hot oil.

3In large saucepan, add salt and stock and cook covered for about 2 hours, or until meat is tender.

4Add vegetables, pepper and parsley and cook until vegetables are tender.
