- 3 c. hot cooked rice
- 1 lb. lean round steak, cut 1/2-inch thick
- 1 tsp. paprika
- 2 tsp. butter
- 2 cloves garlic, crushed
- 1 1/2 c. beef broth
- 1 c. sliced green onion, including tops
- 2 green peppers, cut in strips
- 1 Tbsp. cornstarch
- 1/4 c. each soy sauce and water
- 2 large fresh tomatoes, cut in lengths
Directions

1While rice is cooking, pound meat to 1/4-inch thick and cut to 1/2-inch wide strips.

2Sprinkle meat with paprika and allow to stand while preparing other ingredients.

3Using a large skillet, brown meat in butter.

4Add garlic; cover and simmer.

5Stir in onions and green peppers for five minutes more.

6Blend in cornstarch, water and soy sauce.

7Stir into meat mixture.

8Cook, stirring until clear and thickened (about 2 minutes).

9Add tomatoes and stir gently.

10Serve over rice.
