Peppered Steak With Rice

  • 1 lb. round steak
  • 1 Tbsp. paprika
  • 2 cloves garlic, crushed
  • 1 c. green onions and tops
  • 1 1/2 c. beef broth
  • 2 green peppers, cut in strips
  • 2 Tbsp. cornstarch
  • 1/4 c. water
  • 1/4 c. soy sauce
  • 2 large tomatoes, cut in wedges
  • 2 c. rice, cooked

    Cut round steak in 1/4-inch strips. Sprinkle with paprika. Let stand while preparing other ingredients. Brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes.

    Stir in onion and peppers.

    Cover and simmer 5 minutes.

    Blend cornstarch, water and soy sauce. Stir into meat mixture, stirring until clear and thick (2 minutes). Add tomatoes. Stir gently. Serve over bed of rice.
