- 1 Tbsp. oil
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- 1/4 c. chopped green pepper
- 1 (8 oz.) can tomato sauce
- 1/4 tsp. pepper
- 1/8 tsp. salt
- 1 lb. perch fillets
Directions

1Saute vegetables in oil.

2Add tomato sauce and seasonings; simmer 10 minutes.

3Oil a baking dish and lay fillets in a single layer on bottom.

4Cover with sauce.

5Bake at 450° for 10 minutes per inch of thickness of fillets with sauce, measured at the thickest part, or until fish flakes easily.

6Serve over rice, if desired.
