- 4 egg whites
- 1/3 c. superfine sugar
- 1/2 tsp. vanilla
- 1/2 tsp. cream of tartar
- pinch of salt
Directions

1Let egg whites stand until room temperature.

2Beat egg whites, salt and cream of tartar on high speed with electric mixer until just foamy.

3(Overbeating at this stage may cause weeping.)

4Add sugar, 1 tablespoon at a time.

5Beat until soft peaks form and all sugar has dissolved.

6Add vanilla and beat until glossy peaks form. Spread on hot pie filling, sealing to edge.

7Using spatula, swirl top of meringue decoratively.

8Bake at 325° for 10 to 15 minutes or until golden brown.
