Perfect Pineapple Topping

  • 1 fresh ripe pineapple
  • 4 tablespoons caster sugar
  • 12 cup of fresh mint

Directions

    Cut up your pinapple into chunks and put in fridge to chill.

    Put the mint and sugar into a mortar and pestle (I don't have one so I just used a mug and muddle stick- it worked a treat!)

    and grind it together (or as Jamie puts it- bash the hell out of it) untill the sugar changes colour to green and the you can smell the mint.

    Then all you need to do is sprinkle over the pinapple and serve immediately while the pineapple is cool!
