Perking Roast Beef

  • 3 to 5 lb. beef roast
  • garlic, cut into small pieces to taste
  • onion, in small pieces to taste
  • 2 c. strong black coffee
  • 1 c. vinegar
  • 2 c. water

Directions

    Cut slit in roast, completely through meat.

    Put garlic and onions in slits.
  3. 3
    Put roast in big bowl and pour vinegar over it. Make sure vinegar runs into slits.

    Cover and place in refrigerator for 24 to 48 hours.

    Before cooking, pour off vinegar.

    Place meat in iron pot and brown on both sides.

    Pour coffee and water over roast.

    Cover and cook slowly for about 6 hours on stove.

    May have to add more water.

    About 20 minutes before serving, add salt and pepper.
