- 3 to 5 lb. beef roast
- garlic, cut into small pieces to taste
- onion, in small pieces to taste
- 2 c. strong black coffee
- 1 c. vinegar
- 2 c. water
Directions

1Cut slit in roast, completely through meat.

2Put garlic and onions in slits.

3Put roast in big bowl and pour vinegar over it. Make sure vinegar runs into slits.

4Cover and place in refrigerator for 24 to 48 hours.

5Before cooking, pour off vinegar.

6Place meat in iron pot and brown on both sides.

7Pour coffee and water over roast.

8Cover and cook slowly for about 6 hours on stove.

9May have to add more water.

10About 20 minutes before serving, add salt and pepper.
