  • 1 (16 oz.) box mostaccioli macaroni or fresh egg fusilli
  • 4 oz. fresh green beans
  • 1 small cucumber, sliced
  • 1 large tomato, cubed
  • 1/2 c. cooked turkey or chicken, cubed
  • 1/2 c. Mozzarella cheese, cubed or grated
  • 1/2 c. black olives, halved
  • 1/2 c. olive oil
  • 7 Tbsp. red wine vinegar
  • 2 Tbsp. chopped parsley
  • 1 tsp. dry mustard
  • 1 tsp. cayenne pepper
  • 1/2 tsp. sugar
  • 1/4 tsp. paprika
  • 2 cloves garlic, chopped
  • fresh basil to taste

Directions

    Cook macaroni.

    Rinse with cold water.

    Cook beans until crisp-tender.

    Combine beans, tomatoes, meat, cheese, olives, cucumber and macaroni.

    Whisk together oil, vinegar, mustard, parsley, sugar, cayenne pepper, paprika and garlic.

    Pour over salad; toss and add basil to taste. Refrigerate at least 1 hour prior to serving.
